Beef and cabbage casserole

1 tbsp. butter
1 onion, diced
2 cloves garlic, minced
800g beef mince
6 tomatoes, diced
2 tbsp. tomato paste
1 carrot, diced
1 handful fresh parsley, roughly chopped
800g white cabbage, roughly chopped
150g cauliflower, processed until fine
2 tbsp. lemon juice
Sea salt and freshly cracked black pepper
200g tasty cheese, grated
50g parmesan cheese, grated

  1. Preheat the oven to 180°C.
  2. Heat the butter in a large pan over a medium heat, then add the onion and garlic and cook for 3-5 minutes, or until the onion is tender.
  3. Remove the onion and garlic from the pan, then increase the heat to brown the mince. Depending on the size of your pan, you may need to do this in batches.
  4. Once browned, add back the onion, garlic, tomatoes, tomato paste, carrot and parsley and stir to combine.
  5. Reduce the heat to medium, then add the cabbage, cauliflower and lemon juice and cook for 10-12 minutes, or until the sauce has thickened.
  6. Season to taste, then transfer the mixture to a casserole dish and cover with cheese.
  7. Bake in the oven for 30-40 minutes, or until the cheese has formed a golden crust.
