Beef Stroganoff

600g beef strips
2tbs butter
2 large onions, thinly sliced
1 tbs paprika
2 tsp dijon mustard
2 tbs tomato paste
salt & pepper
1tsp lemon juice
300g mushrooms, sliced
250g full fat sour cream
1/2 small cabbage, shredded
2tbs butter

  1. In a large frying pan, saute beef strips and onion in the butter until just sealed.
  2. Add in the paprika, mustard, tomato paste, lemon juice, salt & pepper and 100ml water.
  3. Stir through mushrooms, and reduce heat to a simmer for 30 minutes.
  4. Once meat is tender, stir in the sour cream and warm through.
  5. To make cabbage, fry in a hot pan with butter until soft. Season with salt & pepper.
  6. Serve beef stroganoff on a bed of sauteed cabbage and garnish with some fresh parsley.
