Celeriac smash
Prep time: 5 minutes
Cooking time: 35 minutes

1 tbsp. olive oil
1 celeriac (approx. 800g), cut into 2cm cubes
2 cloves garlic, minced
1 handful fresh thyme, leaves picked
1 cup chicken or vegetable stock
Sea salt and freshly cracked black pepper

  1. Heat the olive oil in a large pan over a medium heat, then add the celeriac, garlic and thyme and cook for 5-7 minutes, or until the celeriac has a little colour.
  2. Add the stock, then reduce the heat to low and simmer for 25 minutes with the lid on, stirring occasionally to prevent the celeriac from sticking to the pan.
  3. Once tender, season to taste and lightly smash up the celeriac to serve.
