Cheese Rolls

Ingredients

5 free range eggs

100ml thickened cream

75g cream cheese, softened

50g coconut flour

1tsp baking powder

75g mozzarella cheese, grated

75g tasty cheese, grated

50g parmesan cheese, grated

Sea salt and freshly cracked black pepper

Method
  1. Preheat the oven to 160°C and lightly grease or line one 12-hole muffin tray.
  2. Beat the eggs in an electric mixer for 1-2 minutes until fluffy, then add the cream, cream cheese, coconut flour and baking powder and continue beating until combined
  3. Allow the mixture to sit for 5 minutes, then add the remaining cheeses and season to taste.
  4. Spoon the mixture into the muffin tray and bake for 15 minutes, or until cooked through, then transfer to a wire rack to cool.
  5. Serve cold or lightly toasted with your favourite toppings.
