Halloumi Fritters
Prep time: 5-10 minutes
Cooking time: Less than 20 minutes
Ingredients

(makes around 10) (1-2 would be a serve per person)

150g broccoli, roughly chopped

200g cauliflower, roughly chopped

150g halloumi cheese grated

60g tasty cheese, grated

4 free range eggs lightly whisked

3 tbsp. psyllium seed husks

3 tbsp. coconut flour

2 tbsp. butter Sea salt and freshly cracked black pepper

Method
  1. Pulse the broccoli and cauliflower in a food processor until finely chopped (or use a cheese grater).
  2. Combine all ingredients in large mixing bowl, then season to taste.
  3. Set aside for 10 minutes to allow the psyllium seed husks to become glutinous and to help bind the mixture together.
  4. Next, heat some butter in a large frying pan over a medium heat.
  5. Using clean hands mould the mixture into palm sized fritters before adding to the pan.
  6. Cook the fritters for 3-4 minutes on each side, or until golden.
  7. Serve hot or cold with things like: avocado, salad, Greek yogurt
