Lettuce Wraps
Lettuce wraps

Ingredients

6 large iceberg or romaine (cos) lettuce leaves
300g cooked beef strips
100g capsicum, cut into pieces
70g carrot, sliced
50g red cabbage, sliced
50g tasty cheese, sliced
1 handful fresh parsley, roughly chopped
Fresh chives, snipped into 5cm batons
Sea salt and freshly cracked black pepper

Method
  1. Gently wash and dry the lettuce leaves, then layer the beef, vegetables, herbs and cheese in a line down the centre of each leaf.
  2. Season to taste, then carefully fold the bottom and edges of each leaf into a wrap.
  3. Enjoy immediately or secure with a toothpick or wrap in brown paper and twine.
