Moroccan lamb mince

Cooking time: 30 mins

25g butter
2 onions, diced
2 cloves garlic, minced
2 tbsp. Moroccan seasoning
1 cube chicken stock
1kg lamb mince
140g tomato paste
1 tsp. finely grated lemon rind
Sea salt and freshly cracked black pepper

Serving suggestions
Fresh coriander and mint
Full fat, unsweetened natural yoghurt
Toasted pine nuts

  1. Heat the butter in a large pan over a medium heat, then add the onion and cook for 3-5 minutes, or until the onion is tender.
  2. Turn the heat down to low, then add the garlic and seasoning and cook for 1 minute to release the fragrances.
  3. Remove the onion and garlic from the pan, then increase the heat to brown the mince. Depending on the size of your pan, you may need to do this in batches.
  4. Once browned, add back the onion, garlic and seasoning and stir to combine.
  5. Reduce the heat to medium, then add the tomato paste and lemon rind and cook for 7-10 minutes, or until the sauce has thickened.
  6. Serve with coriander, mint, yoghurt and pine nuts on a bed of rocket.
